Summer Cucumber Tomato Salad

1 medium cucumber diced into 1/2 inch chunks-leave skin on if it has not been waxed or is home-grown or organic
1 large tomato or 2 large handfuls of cherry tomatoes chopped into 1/2 inch pieces- you want a relatively even balance of tomatoes and cucumbers
1/3 cup or more of thinly sliced red onion or sweet onion
1 small lemon
1/4 cup (or more) extra virgin olive oil
1 pinch unrefined powdered stevia extract or 3-4 drops unrefined liquid extract (1 tsp sugar may be substituted)
Sea Salt and Pepper to taste (I use liberal amounts of both)

Combine cucumber, tomato and onions in a medium sized bowl. Squeeze juice of lemon over the vegetables and add olive oil, stevia and salt and pepper. Toss and adjust seasonings. The key to this salad is the lemon and stevia. You want the right balance of sweet and sour. The subtle taste of stevia also adds to the flavor of this salad. Do drink the dressing left over after the salad has been eaten. Lemon and olive oil have a cleansing/detoxifying effect on the liver.
